Cauliflower Zing !

A super simple roasted cauliflower recipe with a twist! You'll be shocked how addictive this zesty cauliflower is and don't be surprised if you enjoy an entire head to yourself in one sitting.



Ingredients:

  • 1 head of Cauliflower, chopped

  • 3 tbsp. Olive oil

  • 1 Bay leaf

  • 4 Garlic cloves, minced

  • 3 tbsp. white wine vinegar

  • 1/4 cup fresh parsley to garnish


Directions:


  1. Preheat oven to 425

  2. Chop cauliflower into bite-size florets and mince garlic.

  3. Place cast iron skillet on medium/high heat and add a dash of olive oil.

  4. Cook for 10 minutes to brown all sides before transferring to oven and cooking another 20 minutes.

  5. While cauliflower is roasting in oven, add olive oil, minced garlic and bay leaf to pan and cook on medium/high until garlic is fragrant (just a few minutes).

  6. Add cooked cauliflower to a bowl tossing with olive oil mixture, white wine vinegar and parsley.

  7. Enjoy :)
