HOT HONEY CHICKEN SALAD

If you have tried the salad chain Sweet Green you may understand why I wanted to duplicate this salad. Their salads and plates are nothing short of amazing - but also $15+ for a salad. :( This "dupe" is just as good, half the price and great for meal prep.


The base is a kale-cabbage slaw, topped with blackened chicken, hot roasted sweet potatoes, warm quinoa, roasted almonds and of course the hot honey mustard sauce.

Serves: 3

Cook time: 30 mins.


Ingredients:

  • broccoli and kale slaw from trader joes

  • If you don't have a trader joes, mix together a bag of kale with a bag of coleslaw or broccoli slaw mix.

  • 1 lb. chicken (breast or boneless thigh)

  • 2 sweet potatoes (chopped into cubes)

  • paprika, salt, pepper

  • 1/2 cup quinoa

  • almonds (chopped)


For the sauce:

  • 3 tbsp. sesame oil

  • 2 tsp. honey

  • 2 tsp. red wine vinegar

  • 1.5 tsp dijon mustard

  • 1/2 tsp. sriracha (or other brand of hot sauce)

Directions:

  1. Season chicken with salt, pepper and paprika. Cook in air fryer at 375 F for 12-15 minutes or until done. (Can cook in oven or pan if preferred)

  2. Chop your sweet potatoes into cubes, season with salt, pepper, paprika and cook in air fryer 12-15 minutes or until done. Can also be roasted in oven if preferred.

  3. Cook quinoa per package instructions.

  4. For dressing, mix all listed ingredients together well in separate bowl.

  5. Assemble your salad with kale-cabbage slaw, topped with chicken, roasted sweet potatoes, warm quinoa, almonds and of course the hot honey sauce. This combo might just be better than the real deal. Enjoy!
