One pan and less than 10 minutes of prep, perfect for a busy week night !
1 package trader joes pesto marinated chicken or alternatively 1 lb. chicken breast + 1 jar pesto
1 pint cherry tomatoes
1 8 oz. package mozzarella balls
2 tbsp. olive oil
Balsamic Glaze to drizzle
Optional sides: rice + asparagus, mushroom and red onion mixture
Preheat oven to 350.
If you do not have access to Trader Joes Pre-marinated pesto chicken breast, marinate your own chicken breast in a zip lock bag with at least 6 oz. pesto to cover (marinate 20 minutes -24 hours in refrigerator).
Place marinated chicken breast in baking dish .
Top with whole cherry tomatoes + drained mozzarella balls.
Drizzle the mixture with about 2 tbsp. olive oil, balsamic glaze and a dash of salt and pepper.
Cook at 350 for 30-35 minutes or until chicken reaches internal temp of 165 F or greater.
Switch oven to broil and broil the mixture for an additional 5 minutes or until top is caramelized and cheese is browned
While the chicken is cooking heat up rice in microwave and sauté asparagus, onion, and mushroom mixture in a pan with 1-2 tbsp. olive oil on high for 5-10 minutes or until onions are caramelized.
Plate chicken, rice and veggies and drizzle balsamic glaze on top.
