Tuscan Pasta Recipe



Heathy Tuscan Pasta Takes less than 15 minutes! These bean pasta noodles are a great lower carb swap for your typical noodle in any dish. They are higher in protein, higher in protein, higher in fiber and lower in carbs than your average noodle. Trick your friends and family into eating this healthified pasta option, tell them the secret after they've enjoyed it!


Ingredients:


  • 1 tbsp pri red onions in balsamic vinaigrette or other oil. ke this- Explore Asian, Aldis or LIVIVIA Fettucine (Find at Aldi, Heinen's, Giant Eagle, Walmart, Amazon, but any bean pasta will do)- could also use zucchini noodles for a lower carb dish

  • 1 Red Onion (sliced)

  • 1 cup sundried tomatoes (chop into smaller pieces or buy already quartered to save time)

  • 1/2 cup artichokes chopped (the kind in the jar) (also half into smaller pieces)

  • 1 tbsp primal kitchen balsamic vinegarette (or olive oil)

  • 2 Cloves Garlic Chopped

  • Optional add ins: Roasted Peppers, Feta Cheese, Sautéed Chicken Directions:


  1. Add chopped sundried tomatoes, artichokes with onions to warm. Be sure to drain as much oil as possible from tomatoes/artichokes before adding.

  2. Meanwhile, cook pasta per package instructions (3-5 minutes)

  4. Drain pasta adding to a large bowl and mixing with other ingredients.

  5. Garnish with feta cheese
