After spending 3 weeks in Greece earlier this summer, I consider myself an ~honorary~ Greek and this was one of my favorite breakfast staples! I enjoyed it so much that I brought the recipe home and have been replicating it myself. Give this a try and you wont regret it ! Ingredients for 1 serving: 3 eggs 1/4 tomato chopped up (heirloom is best) 2 tbsp. feta cheese 5-6 olives, pitted Fresh basil leaves and oregano for garnish Directions: Add eggs to pan and allow to scramble 1-2 minutes. While eggs are still semi-runny (not fully cooked) add tomato, feta and olives. Allow to cook 1-2 more minutes or when cooked to desired texture. Plate and garnish with fresh basil and lots of oregano in true Greek fashion !
