Taco in a Bowl
Taco in a bowl . (serves 6, prep/cook time 20 minutes) Ingredients: 1 lb ground chicken or turkey (can use ground beef if that is all you have, preferably grass-fed) (Vegetarians swap 2 cans black beans ) 4 tbsp taco seasoning (I prefer to use my own) Seasoning recipe: 2 tbp chili powder, 2 tbsp cumin, 2 tsp onion powder, 2 teaspoons garlic powder, 2 teaspoons celery salt, ½ teaspoon cayenne pepper, ½ teaspoon black pepper, ½ teaspoon sea salt 1 10 oz can diced tomatoes and chilis or salsa 1 16 oz bag coleslaw mix or broccoli slaw or sliced whole head of cabbage 1 large avocado 2 green onions Fresh cilantro
Optional garnishes: Shredded Cheese, Sliced jalapeños, Plain greek yogurt (instead of sour cream), lime squeeze, taco sauce Directions: Heat large skillet over medium heat. Put ground chicken and 2 tbsp seasoning in pan and cook until meat is browned (about 15 mins). To the skillet add can of diced tomatoes with chilis, coleslaw mix and remaining 2 tbsp seasoning. Cook until cabbage is tender, about 7 mins. Dish up your taco mixture topping with avocado slices, sliced green onion, cilantro, jalapeños, cheese, or perhaps a dollop of plain Greek yogurt.
